There aren't any 'best one or two RPG's that have not been listed' - because the greatest RPG is already listed on this site, and that's 'Darklands' by Microprose. It is the only RPG I have not stopped playing in the 12 years I have had a copy!

hillsfar... barely RPG as such but one of the originals and still the best :D

1. Quest for Glory 1 - Great mix of Sierra adventure games and RPG.
2. Darksun 1 - Gotta love a setting in which the planet is destroyed by mages :)
