Oh man there are so many old games that I would love to see a remake of. Virtually all of the Origin games could really benefit from a remake. Crusader series, Bioforge, earlier Wing Commander games, Ultima, etc. etc. All of Origin's games represent the pinacle of computer game development and design in my opinion.
Otherwise, other games I would like to see a remake of would include:
Ascendancy (with better combat and more variety in the species)
The Space Quest games (specifically 3 and 4)
Earthsiege 1 (Still one of the best Mech games ever)
Destruction Derby
