I have only the castle -> every minute one settler is born there.
I have the castle and 4 depots -> every 5 minutes one settler is born in each of them.
The depots basically only help to reduce the traffic that would occur if every single settler or item would have to go through it.

The manual states otherwise.
The only advantage of meat over bread is that the butcher is much faster in making meat than the baker is in making bread so that one butcher can handle several pig-farms deliveries.
The disadvantage is, that a pig farm does not produce a 1:1 corn->pig ratio (the ratio is obviously slightly lower but there are no figures in the manual) and thus lacks a bit in overall efficiency.
It is even said, that if you have enough land, bread is clearly favourable over meat!
